Italian Gen-Style Soup

Preparation time: 40 minutes
Ingredients
- A very large onion
- 1 tablespoon garlic
- 2 peppers (1 orange and 1 yellow)
- 4 large celery stalks
- 4 large carrots
- 1/2 large tub of baby spinach
- 1 pound ground chicken or ground pork or ground beef
- 900 ml beef broth
- A small stick of cherry tomato
- A bottle of tomato sauce
- One tablespoon tomato paste
- 2 tsp Italian spices
- 1/2 cup short pasta
Recipe
- Sauté onion.
- Add the garlic and all the other vegetables and spices and sauté for a few minutes.
- Add the minced meat and cook for about 15 min.
- Add broth, sauce and paste, tomatoes, then bring to a boil.
- Reduce and simmer for 15 min.
- Add the pasta and spinach and simmer for 10 minutes (add parsley if you feel like it!).
